This is how the spice route was created. The Middle East has been the cradle of many of these wonders, forming a complex and delicious gastronomy, designed to be enjoyed from hand to hand, in abundant and communal dishes. The use of za'atar, harissa and sumac will be one of the challenges of this meeting. We will also explore the sensory relationships between legumes, citrus and lactic ferments.
